Celebrity Chef Derry Clarke and wife Sallyanne announce New Venture

Friday, December 02, 2022.

Chef Derry Clarke and his wife Sallyanne are teaming up with hoteliers, Ray Byrne and Eoin Doyle, to front the dining experience at The Club at Goffs, a new, 50-room, four-star, upmarket hotel due to open in the thoroughbred county of Kildare next spring.

Appealing to both the equine enthusiast and anyone who enjoys a warm welcome, excellent food, quality service and a little luxury, the property is located adjacent to the famous auctioneers.

Commenting on the new venture, Derry Clarke says, “Our plan is to serve classical dishes with modern influences; clean, simple, stylish, and sophisticated food, using the very best locally sourced, Irish ingredients, where possible. After all, we’ve some of the best ingredients available on our doorstep here in County Kildare. Sallyanne and I are already building a wonderful team and we can’t wait to open in the Spring. We want to become an asset to an already-established area for dining out in Kildare and its surrounds.”

The team at Goff held a vision for many years to be able to offer their clients a great place to stay and where they can be in the centre of the sales activity, so they approached the team at Nhance to develop this unique offering.

Ray Byrne adds, “Kildare is under-serviced with hotel rooms, given it has so much to offer, not just with horseracing and breeding, there are wonderful places to visit, including Kildare Village, championship golf at The K Club, Newbridge Silverware, The National Stud, the Japanese GardensCarton House and Palmerstown House, and wonderful heritage attractions like Castletown House, so the decision to run with this project for Eoin and myself was an easy one.”

Together and independently, Byrne and Doyle already have a stable of successful and well- known independent hotels, many with a long-standing reputation for good food and top-notch hospitality. A member of Ireland’s illustrious Blue Book, Byrne’s Wineport Lodge is synonymous with the popular TV show, The Restaurant for many years. BrookLodge & Macreddin Village, owned by Doyle and his brothers, has Ireland’s only certified organic restaurant, The Strawberry Tree. Collectively, Doyle and Byrne own gastropub, The Queens in Dalkey as well as The Eccles in Glengarriff, which has become a go-to foodie destination in the west and most recently their micro hotel brand, REZz in Cork and soon to open in Dublin, provide the essentials for a city break without the drama.
