Fore Distillery Co. Westmeath Ireland, “A new Take on Old Favourites”

Fore Distillery is nestled in the shadow of the renowned seventh century Benedictine Fore Abbey in Co. Westmeath. The backdrop is nothing short of cinematic with atmospheric ruins, rolling farmland, lakes, and a village steeped in legend. Oliver Distiller

Fore Distillery produces Fore Valley Golden Irish Rum, White Irish Rum, Irish Poitín as well as having its own Whiskey maturing, which is set to be on the market in 2026. At the core of Fore Valley’s handcrafted, small batch spirits is Oliver Guirke, a passionate distiller with deep roots in the local community and an artistry that is infused in every drop. Visitors to the distillery will often find Oliver leading the tours himself, giving guests a personal and authentic insight into the production process, from fermentation to the final pour.

Fore Valley’s unique offering of Irish Rum and beloved Irish Poitín are a must-try, bursting with heritage and flavour. Fore Valley Golden Irish Rum is a honey-coloured spirit is gently matured in ex-bourbon casks before being finished with the unique qualities of locally sourced Irish Oak to impart additional colour and flavour, crafting a truly exceptional Irish Rum.

Fore Valley White Irish Rum is made using local spring water and premium grade sugar cane molasses. This white Irish rum is distilled using a combination of Pot and Column stills before being vessel rested to ensure balance and roundness of flavour.

Fore Valley Irish Poitín is made using a local recipe inspired by the 7th-century Benedictine monks of the nearby Fore Abbey. This smooth, full-bodied Poitín is distilled using premium malt barley, oats and the local spring water.

Whiskey Maturing

Fore Valley Whiskey is currently maturing at Fore Distillery, with the first release estimated before the end of 2026. This whiskey will be a distinctively traditional Irish pot still whiskey which encapsulates a rich flavour from malted and unmalted barley. Matured in ex-bourbon casks, the profile is expected to have a flavourful, full-bodied, smooth and warm finish. Made with local Irish ingredients, water from the freshwater springs of Fore & inspired by ancient monastic recipes from the nearby Fore Abbey, this pot still whiskey is set to be something unique.
